I love fish. Almost any fish, with or without sauce. Grilled, steamed or poached it all works for me, and Cod is a lovely succulent fish. Make sure it is responsibly fished though!
1 cod fillet
salt and pepper
150g fat-free natural yoghurt
1 tbsp mustard
lemon jiuce to taste
1 tbsp capers
1 bunch parsley, finely chopped
Sprinkle some salt over the cod fillet and steam for 8 – 10 mins, or untill cooked. In the mean time, put the yoghurt, mustard,some lemon juice, capers, parsley and black pepper into a sauce pan.
Warm over a gentle heat and pour over the cooked fish.
Swerve with rice, rocket and fresh plumb tomatoes.
