Eggs baked in a Bagel

Sometimes we just get sick of the traditional scrambled eggs, fried eggs, and boiled eggs. So coming up with new and interesting ideas for recipes is always a challenge. I remembered the other day that when I was very young, mum used to bake the eggs in Bagels, and offer them as a ‘Sailor in a Boat’. It’s not really so much a boat as a life buoy, or the thing they throw out when you fall off the boat!

Anyway, it’s a great way to present the eggs for a different meal. Try it and see what your kids think – or even you hubby!

Notes

Great for vegetarians
Can be breakfast or dinner!

Ingredients

  • 1 Bagel
  • 2 Eggs
  • 1 slice of pancetta
  • 50g grated cheese
  • 10g Butter

Instructions

  1. Cut the Bagel in half and toast.
  2. Butter the cut side and place in a baking dish, buttered side down.
  3. Crack the eggs into the bagel holes and sprinkle with cheese and pancetta.
  4. Bake in a hot oven for 10 minutes until the eggs are set but the yolk is still runny.
