Awe inspiring crumpets by Mum!

Nothing better than crumpets on a lazy Sunday morning.

These are great, I usually make a load and freeze them, then bring them out, thaw them and toast them on a Sunday morning.


Ingredients:

  • 150ml milk
  • 150ml water
  • 225g sifted strong flour
  • 2tsp caster sugar
  • 7g sachet of fast action dried yeast
  • 1 tsp salt

Method

Warm the milk and water, pour into a large bowl. Mix in the flour, sugar,yeast and salt. Whisk until smooth.

Cover and leave in a warm place ( I use the airing cupboard) for 1 hr until frothy.

Do not stir again!

Grease the inside of three or four metal rings.

Put the rings in a lightly oiled frying pan over a low heat.

Ladle a bit of the batter half way up into the rings. Cook for approx 6 mins, or until you see bubbles, then turn over for about 2 mins. You can take the rings away now.

Take out of pan and out on a wire rack, put rings back in and repeat the process until all the batter is used up.
