I love salmon as a fish to eat. I basically like all fish, but I think the colour of the Salmon once cooked is lovely and particularly appealing on a plate. This is an easy, quick meal for the family.

Preparation time 5 mins
Serves 4
Ingredients:
- 400g dried fusilli pasta
- 5 spring onions, thinly sliced
- 2 tbsp dill, roughly chopped
- 25 g pinenuts, toasted
- 175 g marscapone
- 50ml hot fish stock
- 200g hot smoked salmon fillets, skinned and flaked
- zest of 1 Lemon
Method:
Bring a large pan of salted water to the boil and cook the pasts according to the instructions.
Mix together the spring onions, dill and pinenuts.
Heat the marscapone and stock together in a large pan. Stir till smooth then add the Salmon, lemon zest and ¾ of the spring onion mixture. Season and heat through.
Drain the pasta and stir into the sauce. Garnish with the remaining spring onion mixture and serve.
A light salad on the side with rocket and watercress adds a lovely bite and freshness to this meal.
