We love bacon in out family, and other than the traditional Bacon buttie on a Saturday morning, this is a great meal for everyone to enjoy – and get great vitamens into the kids too!
Heat 1 tbsp olive oil in a pan and fry 2 sliced shallots and 125g slced smoked treaky bacon for 3 min.
Stir in crushed garlic clove and 1 tbsp fres oregano leaves.
Cook for 1 minute.
Add 375 g cooked lentils and pour in 300ml hot chicken stock.
Simmer for 5 – 7 minutes.
Season to taste.
Stir through hot cooked pasts, garnish with chopped curly parsley and basil.
Serve with pasta tubes.
