Macaroni recipes have always been a firm favourite in our family. Not only because the kids love it, but also because it’s easy and quick to make. With this, you put all the ingredients together, boil the macaroni, and then pop it into the oven to let it bake.
What I particularly like, is it is also a recipe that young cooks can make or help make, so it’s an opportunity to teach your little ones to cook, or to simply spend time with them, and show them how easy and fun cooking can be!
MAKES 4 PORTIONS
- 1 tbsp cornflour
- 250ml (5 fl oz) milk
- 55g (1oz) mild cheddar, grated
- 3 eggs
- 185g macaroni
- Salt and Pepper to taste
- Optional topping
- 2 sliced tomatoes
- 4 tbsp grated Parmesan
MethodPre – heat the oven to 180C
Put the corn flour in a bowl and whisk in the milk and eggs. Stir in the mild cheddar cheese, (mature cheddar can also be used, but my children prefer a milder taste) and add salt and pepper to taste. Mix well. Hint: this part is pretty easy for children to do, as it’s one bowl, and a little mixing, so get them involved if you like!
Cook the macaroni according to the packet instructions and drain well. Pour the cooked Macaroni into an oven proof dish, and pour the sauce (or let you kids pour) all over the macaroni. Put the macaroni into the oven and allow it to bake for 20 – 30 minutes.
10 minutes before you are due to serve, lay the cut tomatoes on the top of the macaroni, and lay the grated Parmesan cheese on top of the tomatoes and return to the oven for the last 10 minutes, or until slightly brown.
For the optional ingredients, include a cup of peas, or corn when you put the macaroni into the oven dish.
