When summer arrives, all the lovely fresh berries arrive too. I can’t get my daughter to stop eating blue berries, but seeing as they are so rich in anti-oxidants I really don’t mind. Fresh fruit is wholesome, healthy and just great on a summer day.
If your kids love pancakes, and they also love fresh berries and fruits, then this recipe will get them going! It’s also great for any vegetarians out there.
Vegetarian, served cold
- 2 pancakes ( see pancake mix previously posted if you don’t have one)
- 150g/+5oz summer berries
- 210ml/7fl.oz. Greek yoghurt (or normal yoghurt, but greek is thicker)
1. Place summer berries in a small bowl. Stir in Greek yoghurt.
2. Lay one pancakes on a plate, spoon half the fruit mixture over half then
fold the other half over. Repeat the process with a second pancake and
Summer berries can be Blackberries, Mulberries, Raspberries, Blueberries , Strawberries, and Gooseberries. Sometimes The Gooseberries can be a little tart, so use sparingly.
