Paprika Wedges

Capsicum peppers used for paprika are unusually rich in vitamin C.  They can vary in strength from mild to hot, but when used in or on food they give it colour as well as taste.  I use it liberally ( sometimes too liberally my kids tell me), and I love it!

Great for Vegetarians
Great as a finger food for babies

Ingredients:

  • 4 baking potatoes
  • Olive oil
  • Paprika
  • Salt
  • black pepper
  • 5 tsp paprika

Method:

Cut each potato into 6 wedges and toss in a large roasting pan.

Add 5 teaspoons of paprika, salt and pepper seasoning and 5 tablespoons of olive oil.

Put all of this into the oven for about 30 to 35 minutes.

If you are weaning your baby, try give them a wedge to ‘gum’ on. Make sure they don’t choke, and watch them all the time!
