For fussy eaters who love pizza and spaghetti, this might be the solution to either a quick meal, or a sauce that they like that goes with everything, so they’ll eat things they normally wouldn’t. And it’s healthier than store bought cheap tomato sauce!

Can be frozen for easy meals next time!
- 1 tbsp olive oil
- 1 onion, finely chopped
- 1 bay leaf
- 1 garlic clove, finely chopped
- 1 tbsp tomato puree
- 2 x 400g tins plum tomatoes
- pinch of caster sugar
- 1/2tsp oregano
- ½ tsp marscapone
- 2 tbsp freshly chopped basil.
Heat the oil in a large pan and gently fry the onion with the bay leaf for 10 mins until soft. Add the garlic and tomato puree, and cook for 1 min.
Pour in the tomatoes and mash with a wooden spoon. Add the sugar, oregano and plenty of seasoning.
Bring to the boil and then simmer for 30 mins. Remove the bay leaf.
Stir in the marscapone, and serve with your choice of cooked paste, garnished with fresh basil.
As an added treat, use this as your sauce on any Vegetable Burgers – it makes then taste delicious!
