Pumpkin pie muffins

Always a good option instead of sweets at the door on Halloween night – confuses some kids, but is the healthier option!


1 egg
1 egg white
1/2 cup sugar (more if you want sweeter, up to 1 cup)
1 cup canned pumpkin (or the pumpkin from your carved one)
3/4 cup applesauce
1/4 cup water
1 2/3 cup whole wheat flour
1 tsp baking soda
3/4 tsp. salt
1/2 tsp. baking powder
1/2 tsp.cinnamon
1/2 tsp. ground cloves
1/2 tsp. nutmeg
1/2 cup nuts, chopped (optional)


Preheat oven to 350°. Grease muffin tins by spraying with a non-stick spray.
In a medium sized bowl, combine eggs, sugar, pumpkin, applesauce, and water.
In a seperate bowl, mix together dry ingredients.
Add dry ingredients to wet mixture, and stir until just blended. If using nut, stir in now.
Fill muffin tins 3/4 full.Bake 20 minutes, or until toothpick comes out clean.
