Ricotta and spinach lasagne

This is like canneloni, but made with Lasagne! My kids love lasagne, so it’s a real winner in our house.

Takes about 20 mins to prepare
Takes 20 – 25 mins to cook

Olive oil
1 Large onion, finely chopped
2 cloves garlic, finely chopped
300g ricotta cheese
100g feta cheese, crumbled
3ml ground nutmeg
salt and freshly ground black pepper
12 lasagne sheets
125ml (1/2 cup) grated mature Cheddar cheese

Preheat the oven to  180 Deg C. Heat 30 ml olive oil in a large pan and fry the onion and garlic for a few minutes or until fragrant.

Add the spinach and fry for about 1 min.

Remove from heat and leave to cool.

Mix the cooled spinach mixture, ricotta, feta cheeses and nutmeg and season with salt and pepper.

Meanwhile cook the lasagne sheets two at a time for 1 minute or until soft. Set aside.
Sprinkle the cooked lasagne sheets with olive oil and arrange in an oven proof dish.
Spoon the spinach filling on one half of each sheet. Fold the sheets over the filling.
Repeat with the remaining pasts and filling.
Sprinkle the Cheddar cheese on top.
Bake for 15 mins or until done.
Serve with Tomatoe salad, or crisp lettuce on the side.
